Description
Wheat syrup from La Finestra Sul Cielo is obtained with the most recent method that uses purified enzymes to convert corn starch into simpler sugars. With this method, a syrup richer in simple sugars is obtained compared to traditional malts and it is possible to produce syrups composed of a single cereal, since there is no need to add barley. Wheat syrup is produced by adding purified enzymes to the cooked wheat. Enzymes break down the corn starch molecules into maltose. A dense and very sweet syrup is obtained from the following cooking and filtering.
