Description
Chives are a plant of the same genus as onion and garlic whose thin, hollow stems are eaten as a spice. It has a marked onion flavor, but softer and more elegant.
Indication
It is normally eaten raw and is an excellent addition to salads, soups, creams, vichyssoise, in an omelette or sprinkled on top of baked fish or poultry, it is perfect for all kinds of stews, butter can also be mixed with chives which is then left to melt on top of freshly made grilled meats. Many cooks value its aroma so much that they frequently use it to flavor oils and vinegars.
