Description
Nut flour, organic tiger nuts from Ecoidees nut base, the fruit of the grass "chufa", which is particularly distinguished by its insoluble fiber content. In addition, it offers a high-quality and easily digestible vegetable protein, numerous minerals and trace elements as well as a fat with a high rate of unsaturated fatty acids. Nut flour is naturally gluten-free! For its nutritional properties it can be eaten raw mixed in vegetable milks and especially in mueslis to which it brings a unique flavor. Cooked, we sprinkle it on the gratins of vegetables, in the bottom of a fruit pie (goes wonderfully well with apple or pear), we incorporate it into cookies, pancake batter and other pastries. It is often combined with brown millet flour in a highly nutritious mixture, with honey and olive oil.
Indication
The nutmeg, naturally sweet, also constitutes a source of energy with rapid assimilation, is favorable to the nervous system and the blood pressure. For this reason, this food is particularly interesting not only as a daily ingredient in our cuisine, but its use is favorable for work, school and sport. As the feeling of hunger is markedly reduced, tiger nuts can also be incorporated into slimming diets. Thanks to the dietary fibers, the nutgrass brings volume in the digestive system, which considerably accelerates the passage of food in the intestine which swells in volume. Constipation problems usually improve within a few days and have no side effects. Nut fibers, insoluble in the small intestine, cause in the large intestine a very beneficial action on the intestinal flora. The lactic ferments - previously repressed by putrefactive agents - quickly regain their primary role. They nourish the flora and the bacterial carpet of the intestinal mucosa, and strengthen symbiotic germs while repelling harmful microorganisms. Thereafter, the intestinal environment evolves from the state at risk of dysbiosis to the very desired state of eubiosis. Such changes in the intestinal flora have actually been observed in many patients consuming nutmeg, suffering from severe intestinal disturbances. Nutgrass contains many substances, some combinations of which have become rare in "civilized" food. We can mention enzymes, biotin (vitamin H), rutin, a flavonoid which stabilizes blood vessels and effectively protects organs and cells from free radicals.
