Ecoidees Organic Coconut Flour is produced from organic coconut flesh. After drying and degreasing (by pressure to extract the virgin coconut oil), it is finely ground into a powder quite similar to wheat flour. Coconut flour has a low glycemic index and is ideal for low GI menus. It is also an interesting source of protein: coconut flour contains as much as wheat flour, but it does not contain gluten. This is a great advantage for those whose gluten intolerance or wheat allergy limits access to many food preparations.
