Description
Confix Bio by Natali is a gelling and vegetable preparation for light, fast and tasty jams. This preparation brings together several ingredients for a successful jam. Dose for 1 kg of fruit.
Indication
Brown sugar allows pectin to express its gelling power. Citric acid fights the crystallization of sugar and helps maintain the color of fruits. Pectin is a natural gelling agent found in the skin and seeds of fruits. Its gelling power only develops in the presence of sugar and acid. Agar-agar is a gelling agent, extracted from red algae, which reinforces the action of pectin. The use of agar-agar helps to reduce the amount of sugar needed for the jam.
Intake mode
It is advisable to clean, peel and cut the fruit. Weigh 1 kg of prepared fruit. Mix with 400 to 700 g of sugar depending on the acidity of the fruit and your taste! Let it marinate until the sugar dissolves completely. Bring the mixture to a boil for 5 minutes while stirring. Add the Confix'Bio envelope and continue to boil for another 5-10 minutes while stirring. If it is a fruit rich in pectin, 5 minutes will be enough. This is the time to taste the jam: pour a few drops of jam in a very cold plate, if they take gelatin it is cooked, otherwise, prolong it for a few minutes. Place the boiling jam in jars, close the jars and turn them over to sterilize.
Storage conditions
Store the powder at room temperature in a dry place.
