Description
This umeboshi is produced in Japan according to the traditional method. The plum of the ume variety is harvested unripe and stored in salt and shiso leaves for a long period to give it its characteristic red color. The plums are then left to dry in the sun for a week and then put away to mature in barrels for another year. Thanks to the aging, the typical salty and sour taste will develop.
