Differences between Ceylon cinnamon and cassia cinnamon

Both come from trees of the genus Cinnamomum and are extracted from their inner bark.

Ceylon cinnamon has a light brown color and a sweeter taste. It curls into a single spiral and has a fine, brittle consistency.
Cassia cinnamon has a slightly darker color and a stronger, bitter taste and contains a large amount of coumarin.
