Mimasa's Unpasteurized Kome Miso is a soybean and rice paste fermented with koji seeds in wooden jars for 18 months. It is the sweetest of the Misos. Not pasteurized. Traditionally, misos are used to strengthen the intestine and regenerate the intestinal flora.
It is recommended to dilute 1 teaspoon of Miso in a cup of hot broth. You can also prepare delicious pates by mixing it with Tahin (Sesame Paste) and water, or use it as a dressing in sauces. Do not boil to preserve all its properties. Once opened, store in the refrigerator.
