Description
Pistachio puree from Jean Herve is only made from pistachios dried in hot air and then ground with a stone wheel at low temperature.
Indication
Pistachio puree is used diluted, advantageously mixed with white almond puree.
It can be used both in savory cuisine, incorporated into sauces, and in pastry for macaroons, creams, ice creams ...
Intake mode
It is recommended to grind 4 handfuls of basil, 4 cloves of garlic, a teaspoon of pistachio puree, and a good pinch of coarse salt in a mortar (ideally).
Add olive oil little by little until you get a semi-liquid, semi-sticky paste, adjust the salt at the end to have a good strong garlic mixture, with the aroma of basil, fruity olive oil, and pistachio scent aftertaste.
The decantation of the oil is normal.
Keep away from moisture and light
Stir each time.
